Celeriac Coleslaw

Vegetarian

Vegetarian

This Celeriac Coleslaw is a fresh, crunchy twist on a classic picnic staple. By substituting a portion of cabbage with coarsely grated celeriac, you add a sophisticated, slightly nutty depth of flavour that pairs beautifully with the sweetness of the carrots and the richness of the mayonnaise. It is an incredibly versatile base recipe that invites experimentation; whether you want to add a crisp bite with apple, a tangy zip with cider vinegar, or a hint of spice with Dijon mustard, it adapts easily to your family’s favourite tastes.

Ingredients

250g white cabbage, chopped finely
250g celeriac, coarsely grated or julienne
75g carrot, coarsely grated or julienne
3 tbsp mayonnaise

Optional additions: Chopped apple, walnuts, a dash of cider vinegar, a teaspoon of Dijon mustard, or raisins.

Method

  1. Prepare the vegetables: Finely chop the white cabbage and coarsely grate (or julienne) the celeriac and carrot.
  2. Combine: Place all the vegetables into a large mixing bowl.
  3. Dress and mix: Add the mayonnaise and toss thoroughly until the vegetables are evenly coated.
  4. Customise (Optional): Stir in any additional variations your family enjoys, such as apples for sweetness, walnuts for crunch, or vinegar for tang.
  5. Serve: This slaw is best served fresh but can be chilled for 30 minutes to allow the flavours to meld.
