We grow around 50 acres of onions from sets which are look like miniature onions and will produce a crop earlier than from seed. We plant in March and expect to harvest in mid to late August. First we flail the leaves, then we undercut the bulb and leave in a windrow for 24 hours to start the drying. Finally we harvest into trailers and into store where we blow with warmed air until the crop is rustling dry. The onions are not long in store; we load out to our customer during September and October because we need the store for celeriac in November.
